Ingredients of Ms. Kipper's Roasted Tomato-Basil Soup

  1. Prepare 2 can of whole tomatoes...(they r sealed and peeled; 28oz)... if using fresh from the garden... peel tomatoes and use 20 medium tomatoes..
  2. Prepare 3 tbsp of dark brown sugar.
  3. You need 1 large of onion, minced.
  4. It's 2 tbsp of garlic, minced.
  5. It's 3 cup of chicken broth... i use homemade broth.
  6. Prepare 1/4 tsp of allspice.
  7. Prepare 3 tbsp of tomato paste.
  8. Prepare 1 can of evaporated milk (5oz).
  9. Prepare 1/4 cup of fresh basil leaves... can use 3 TBSP of dried.
  10. It's 1/2 tsp of salt.
  11. You need 1/4 tsp of pepper.
  12. It's 3 stick of celery, minced.
  13. It's 1 of ******* s&p to taste.
  14. It's 1 can of diced tomatoes with chili.... drained.

Ms. Kipper's Roasted Tomato-Basil Soup instructions

  1. drain cans of whole tomatoes.. AND RESERVE LIQUID....will need liquid later.... preheat oven to 450°????.
  2. cover cookie sheet with foil...,spray cookie sheet with non-stick spray. arrange whole tomatoes in single layer. I sprinkle with brown sugar, salt, pepper, minced onions, and sprinkle with garlic powder... cook for about 25-30 minutes... the smell is awesome.... liquid should evaporate and tomatoes begin to color....
  3. in crockpot you should have tomatoes mixture, and all other spices.... tomatoes with chili....minced celery..EXCEPT EVAPORATED MILK....
  4. I use my hand held blender once I put them in my crockpot and the reserved liquid.....you will need the liquid to puree... IF YOU DONT HAVE A HAND HELD.. PUT IN BLENDER AND PUREE..
  5. blend well ..... cover and cook on low for 8 hrs or 4 hrs on high.....
  6. add EVAPORATED MILK.... and s&p to taste... cook for another hour on high...
  7. ENJOY!!!.
