  7. It's 1 each of Bay Leaf.

  1. Fill large sauce pan with water. Add soup bone, or shank, and stew meat. Salt water..
  2. Allow to sit on stove two hours, without heat. This lets the meat and flavor from bone or shank seep into water for flavoring..
  3. In the meantime, measure and prepare the remaining ingredients. Cook rice according to directions..
  4. After the meat has set for 1 1/2 hour, add the onion and celery and garlic, bay leaf, and parsley. Turn on the water to bring to a boil..
  5. Once it reaches the boiling point, reduce heat, and continue simmering for an additional hour..
  6. Remove from heat, let it cool. Do Not Drain. This is your soup base..
  7. When cool enough to handle, separate any meat on the soup bone, and place back into soup base. With a slotted spoon, remove stew meat from base, shred with fingers or paring knife, and place back into soup base..
  8. Add cooked rice to soup..
  9. Open cans of diced tomatoes, and tomato sauce. Add to soup..
  10. Place back on stove, salt and pepper to taste, heat and serve..
